Gingerbread Waffles
 

Ingredients:

1/3 cup / 80 ml Rogers Best Brown Sugar or Lantic Old Fashioned sugar

2 eggs, separated

2 cups / 500 ml buttermilk (or sour milk)

½ cup / 125 ml Rogers Golden Syrup

6 tbsp / 90 ml melted butter

1 cup / 250 ml flour

1 cup / 250 ml whole-wheat flour

3 tsp / 15 ml baking powder

1 tsp / 5 ml baking soda

1 tsp / 5 ml each of ground ginger, cinnamon and allspice

½ tsp / 2 ml salt

Pinch of cream or tartar

 



Preparation:

A touch of ginger and cinnamon, and a little buttermilk, make these waffles wonderful. Remember to fold in the egg whites gently. This recipe makes about 12 waffles.

PREHEAT your waffle iron.

BEAT THE SUGAR and egg yolks together, then mix in the buttermilk, Rogers Golden Syrup and butter.

IN A SEPARATE BOWL, combine the flour, baking powder, baking soda, spices and salt, and mix until it is just blended. Don’t over beat. Stir in any additional ingredients at this stage.

 Example:

 -          Hot blueberry syrup

-          Rogers Canadian Syrup

-          Rogers Golden Syrup

-          Fresh fruit

-          Sour cream and apple fruit

-          Sour cream and raspberries

-          Bacon, chives and scrambled egg

-          A paste of lemon juice and Rogers Berry Sugar

BEAT THE EGG WHITES and cream of tartar together until the egg whites form soft peaks. Gently fold them into the batter.

BACK THE WAFFLES until they are golden brown and cooked through.
