Pumpkin Chutney
Pumpkin Chutney


2 lbs / 1 kg cubes of pumpkin, coarsely chopped
4 tomatoes, skinned and chopped
8 oz / 225 g onions, chopped
¼ cup / 60 ml golden raisins
1 lb / ½ kg Rogers or Lantic Old Fashioned Brown
2 tsp / 10 ml salt
2 tsp / 10 ml finely chopped fresh ginger
1 tsp / 5 ml ground black pepper
2 tsp / 10 ml grated fresh nutmeg
2 garlic cloves, chopped
2 cups / 500 ml apple cider vinegar



PUT ALL THE INGREDIENTS into a large pan, bring slowly to the boil and simmer for about 1 hour. As the chutney thickens, stir it constantly to keep it from sticking to the bottom.

WHEN IT IS READY, pour the chutney into jars, cover and seal.
