Sugar Hints

  • A pinch of sugar gives that just-picked taste to vegetables that are past their peak. In fact, sugar makes most vegetables taste better, and it also keeps them green when they are cooked.
  • Every Italian chef will tell you to add white sugar to tomato sauce - it produces a better flavour by balancing the natural acidity of the tomatoes.
  • Mix a spoonful of sugar with water and brush it over meat before you roast it. It seals in the juices and keeps the meat moist.
  • Sugar is also an important ingredient in most stir fries, as it brings out natural flavours.
  • When you make jams and jellies, use oven-warmed white sugar. It will dissolve faster, which helps the fruit release its natural juices and helps the jam to set.
  • Use 1 tbsp (15 ml) of white sugar when you cook diced meat. It won't add any sweetness, just a beautiful brown colour. Add the sugar to the heated fat, stir it over medium heat until the mixture browns, then add the meat.
